Chicken and Wild Rice Soup

1 medium onion, chopped
2 celery ribs, diced
2 medium carrots, diced
1/2 cup butter/margarine
1/2 cup flour
4 cups chicken or turkey broth
1 pkg rice a roni or Uncle Bens long and wild rice (prepared per directions on box)
2 cups Half and Half
2 cups cooked chicken or turkey
1 tsp parsley flakes
1/2 tsp salt
1/2 tsp pepper

In soup kettle over med heat, saute onions, celery and carrots in butter until onion is transparent. Reduce heat. Blend in flour; cook and stir in 2 minutes. Gradually add broth stirring constantly. Bring to a boil; cook for 1 minute. Reduce heat. Add remaining ingredients; simmer for 20 minutes.

Eat with French Bread or Breadsticks.
