We got this recipe from Scott's Grandma. It is a really great version of this soup.
Minestrone Soup
3 slices bacon - finely chopped
1 cup chopped onion
1/2 cup celery
2 cloves garlic, crushed
1 can Campbells Beef Broth (we put in a bouillon cube instead)
1 can Bean with Bacon Soup (one family size or two normal sized cans)
1 1/2 soup can water
1 teaspoon basil
1 can (16 0z.) tomatoes undrained
1/2 cup uncooked small tube macaroni
1 cup cabbage cut in long thin stripes
1 cup zucchini (cubed)
1/2 teaspoon salt
In large saucepan, brown bacon and cook onion and celery with garlic and basil until tender. Stir in soups, water, tomatoes, macaroni and salt. Bring to boil; cover. Reduce heat; simmer 15 minutes. Add cabbage and zucchini. Cook 10 minutes more or until done. Stir occasionally.
